The principle of modified atmosphere storage and fresh-keeping
technology:
Oxygen accounts for 20.9% of normal atmospheric gas composition,
and 0.03% for carbon dioxide, and modified atmosphere storage will
change the content of oxygen and carbon dioxide in the storage
environment. Among them, the content of oxygen is reduced to 2%
-5%, and the content of carbon dioxide is increased to 2% -5%.
In addition to the use of low-oxygen and high-carbon dioxide gas
conditions, the modified atmosphere storage and preservation
technology also uses low-temperature storage. Fruits and vegetables
in such a storage environment can maintain their freshness as long
as possible and reduce the quality loss caused by respiration.
After picking fruits and vegetables, they will still absorb oxygen
from the atmospheric environment, release carbon dioxide, and
produce a certain amount of water and release heat, that is, they
are still breathing.
This respiration will decompose and consume nutrients in fruits and
vegetables, resulting in reduced quality. To reduce the
deterioration of the quality of fruits and vegetables caused by
respiration, the key is to weaken their respiration and change the
gas composition in the storage environment of fruits and vegetables
to achieve this goal.
Ethylene can accelerate the ripening of fruits and vegetables, and
is often used as a ripening agent. It is also an important reason
for the post-ripening and aging of fruits and vegetables. Reducing
the ethylene gas content in the storage environment can effectively
delay the after-ripening and aging of fruits and vegetables, and
prolong the storage time of fruits and vegetables.
The low-oxygen and high-carbon dioxide gas environment created by
modified atmosphere storage can inhibit the biosynthesis of
ethylene and avoid the degradation of fruits and vegetables due to
ethylene accumulation. The low-oxygen, high-carbon dioxide
environment and low-temperature environment under controlled
atmosphere storage can also inhibit the growth of aerobic and
mesophilic microorganisms, reducing the spoilage and deterioration
of fruits and vegetables caused by microorganisms.
At the same time, the modified atmosphere storage environment will
also inhibit the activity of certain enzymes, such as succinate
dehydrogenase, cytochrome oxidase, etc., thereby delaying the
degradation of fruits and vegetables caused by enzymatic reactions.
